Dry aging is a time-honored process that transforms good beef into something exceptional. For 21 days, our beef is aged in a carefully controlled environment with steady airflow, humidity, and low temperatures. During this time, moisture slowly evaporates and natural enzymes break down the muscle fibers—enhancing tenderness and deepening flavor. The result is a rich, melt-in-your-mouth steak that takes taste to the next level.

  • Rare: Internal Temperature: 120-125°F (49-52°C)
  • Medium Rare: Internal Temperature: 130-135°F (54-57°C)
  • Medium: Internal Temperature: 140-145°F (60-63°C)
  • Medium Well: Internal Temperature: 150-155°F (66-68°C)
  • Well Done: Internal Temperature: 160°F (71°C) and above

Your order is carefully packed in an insulated box with cool-gel ice packs to keep everything frozen during transit. We ship quickly to make sure your meat arrives frozen and in peak condition.

If your order arrives fully thawed, please tell us. As long as the temperature is 40°F or below, the meat is safe to refrigerate and enjoy within 3–5 days. However, we don’t recommend refreezing fully thawed items.

We guarantee your order will arrive frozen or partially frozen, so you can put your items directly into the freezer when they get to you!
